A Salad That I Long For?!?

Not a huge salad fan. They always taste good when someone else makes them, but rummaging through our pantry inspired me to culinary greatness. Well, maybe that is a stretch, but I can truthfully say that we are hooked. Several times a week. Easy, healthy, ready to modify. The 3 perfect meal traits.

Green leaf lettuce

1 can black beans, rinsed and heated

1 can sweet corn, drained

2 diced tomatoes

sharp cheddar, diced

few crushed tortilla chips (really, a few goes a long way here)

tiny bit of Spicy Ranch dressing (once you stir, is just right. Don’t use too much, overpowers other flavors)

  1. Thanks for writing down the ingredients for me- I was already trying to remember! And Christa? just so you know, the visit was the best ever! We all truly had a wonderful time, but the time you & I spent together was really a blessing, I miss spending time with you and now your girls too. I can’t think of a thing that I would have preferred to do last week than to pass the time of day, and night with you! Love you.
