Not a huge salad fan. They always taste good when someone else makes them, but rummaging through our pantry inspired me to culinary greatness. Well, maybe that is a stretch, but I can truthfully say that we are hooked. Several times a week. Easy, healthy, ready to modify. The 3 perfect meal traits.
Green leaf lettuce
1 can black beans, rinsed and heated
1 can sweet corn, drained
2 diced tomatoes
sharp cheddar, diced
few crushed tortilla chips (really, a few goes a long way here)
tiny bit of Spicy Ranch dressing (once you stir, is just right. Don’t use too much, overpowers other flavors)
