Molasses Gingerbread Bar Cookies

I am really into gingersnaps right now. I am also really into keeping my teeth intact. Time to make my own version, that will produce big ginger taste in a soft gooey cookie. I have a few recipes I like, but wanted to revamp them into a bar. So, here is what a I came up with. Let me know what you think

Preheat oven to 350.

2 1/4 c. flour

1 tsp. ground ginger

1 tsp. allspice

1 T. cinnamon

1/2 c Craisins

1 tsp. baking soda

2 T. chopped crystallized ginger (you can buy at Penzey’s)

1/4 tsp. salt

3/4 c. softened margarine

1 c. white sugar

1/4 c. dark brown sugar

1 egg

1 T. water

1/3 c molasses

2 T. white sugar

Mix spices, flour and salt to set aside. Cream together margarine and 1 c. sugar. Beat in egg. Then molasses and water. Gradually sift in dry ingredients. Pour into greased 9 x 13 pan. I dusted top with about  T. finely chopped crystallized ginger.  Bake for 38-40 minutes, be careful to not overbake, but a clean testing pick is best.

These can be dusted with powdered sugar after they cool, or a white icing. I would lean toward an icing glaze. STore in airtight container to prevent getting too hard.

  1. I wonder what I could subsitute in place of allspice (it is a killer allergy wise for me). Do you think leaving the craisins out would make any difference because I avoid all dried fruits because of a mold allergy. Any ideas?

    • With or without craisins would be totally fine, made both ways. When I don’t use allspice I double in cinnamon. But I really , really love more any chance I get . I have found those spices to be pretty interchangeable. Or more of the ginger if you enjoy the flavor?
